When I first started baking for the country market I didn’t realise how addictive it was going to become.

I used to love baking when I had to a family to feed and now my family has been extended I’m loving it all over again. This time I bake mostly gluten and dairy cakes and bakes as there is a definite need for them. Gluten free foods are readily available but it is harder to find dairy free cakes. Soups at this time of year are popular so I’m turning seasonal veg into warming soups too.

We are surrounded by allotments and fruit trees so preserving the harvest was the next step. All through the summer producers would bring their freshly picked fruits and I would turn them into jams & jellies.

I was lucky enough to win a bursary to Denman college so I chose Preserving and jam making. I loved every minute of it and learned so much.
